Meat Specialist Extension Agents instruct and assist in the expansion of the Butcher School at Penn State University, which is a certified meat processing apprenticeship, centrally located in Pennsylvania. The specialist is responsible for collecting, maintaining, and analyzing data for this effort by Extension and the Department of Agriculture to support workforce development in the field of meat processing. They provide expertise in meat harvesting and processing through university courses and meat science extension event Responsibilities:
Meat science research
Organizing and presenting reports, documents, and presentations
Ensuring inventory and storage is at appropriate levels at The Butcher Block
Education requirements:
Highschool Classes: Agriculture Education, Science (Biology, Animal Science, Meat Science, Anatomy and Physiology), Mathematics, Mechanics Education and Training: High School Degree, Butcher Apprenticeship, Bachelor's Degree in Animal Science or Food Science, Ability to use knives and other tools, Masters Degree in Animal Physiology, Animal Science or Food Science, Doctorate in Meat Science
